Craving Comfort Food

These miserable cookies (can you even call them that?) were my first attempt to bake over here in England.
I tried twice and only receive flat, tough, and insanely sugary disks. So you can't bake cookies, big deal? Oh but it was a big deal. I needed my home comfort food!
So I made a list:
1. Measurements are weighed out here and the measuring cup is in ounces & liters.
Solution: buy American measuring cups
2. The oven is in Centigrade and sounds like a tornado is coming- convection perhaps?
So...don't guess the temperature but convert it to Fahrenheit and heat at a lower temperature.
3. Something is wrong with the flour and the brown sugar
The Web only told me that there is less protein in the UK flour then the US flour, well what was I supposed to do about that? Until a friend here told me that it is the equivalent of cake flour. So the answer is add more flour!

After a month of food depression, I tried again. I may have done a little kitchen dance when that banana bread rose and tasted AMAZING! Since then, I have been spreading the sweet bread love to my home group, neighbors and strangers
Their favourite so far has been the pumpkin chocolate chip bread. Thanks to Janelle for the canned pumpkin and chocolate chips!!!!

  2. awesome, at least you found something - the cookie baking sounds like my engineering projects. Do they have any different/better candy up there?

    Christmas. Otherwise there would have been more than one depressed person.
